Asian Ground Beef & Veggie Rice Bowl

What You'll Need
For the Rice
- 1½ cups uncooked white rice
- 3 cups water
- Pinch of salt
For the Ground Beef
- 1 lb grass fed ground beef
- 1 tbsp sesame oil
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- ½ yellow onion, diced
Sauce
- 3 tbsp low-sodium soy sauce
- 2 tbsp oyster sauce
- 1 tbsp honey
- 1 tbsp mirin
- 1 tsp rice vinegar
- 1 tsp sriracha or chili garlic sauce (optional)
- ½ tsp black pepper
For the Vegetables
- 2 cups broccoli florets
- 1 red bell pepper, thinly sliced
- 2 large carrots, peeled into ribbons using a vegetable peeler
- 1 tbsp olive oil
- Salt and black pepper to taste
For Garnish
- 3 green onions, sliced
- 1 tbsp toasted sesame seeds
Let's Cook
1. Cook the Rice
Combine the rice, water, and a pinch of salt in a saucepan. Bring to a boil, then reduce the heat to low. Cover and cook for 15 minutes. Remove from the heat and let stand, covered, for 5 minutes. Fluff with a fork and keep warm.
2. Prepare the Sauce
In a small bowl, whisk together: soy sauce, oyster sauce, honey, mirin, rice vinegar, sriracha (if using), and black pepper. Set aside.
3. Cook the Ground Beef
Heat sesame oil in a large skillet over medium-high heat. Add the diced onion and cook for 3–4 minutes until softened. Stir in the garlic and ginger and cook for 30 seconds until fragrant. Add the ground beef and cook for 6–8 minutes, breaking it apart with a spoon, until browned. Drain excess grease if necessary. Pour in the prepared sauce and stir to coat the beef. Simmer for 2–3 minutes until the sauce thickens slightly.
4. Sauté the Vegetables
In a separate skillet, heat the olive oil over medium-high heat. Add the broccoli and cook for 3–4 minutes. Stir in the sliced red bell pepper and cook for another 2–3 minutes. Add the ribboned carrots during the final 1–2 minutes of cooking, just until slightly tender but still vibrant. Season lightly with salt and pepper.
5. Assemble the Bowls
Divide the white rice evenly among serving bowls. Top with: Asian-style ground beef, sautéed broccoli, red bell peppers, and ribboned carrots.
6. Finish & Serve
Garnish each bowl with: sliced green onions, & toasted sesame seeds. Serve immediately while warm.
