What You’ll Need
For the Beef:

1 lb Pasture Provisions grass-fed ground beef

2 cloves garlic, minced
-
1 tsp ground cumin
-
1 tsp smoked paprika
-
1 tsp dried oregano
-
½ tsp crushed red pepper (optional)
-
Salt & black pepper, to taste
For the Bowl:
-
2 cups cooked quinoa (or brown rice/cauliflower rice)
-
1 large cucumber, diced
-
1 red bell pepper, diced
-
1 cup cherry tomatoes, halved
-
½ red onion, thinly sliced
-
1 avocado, sliced
-
½ cup Kalamata olives, halved
-
drizzle of 2 Tbsp fresh parsley or dill, chopped
- Sriracha for heat is desired
For the Tzatziki Sauce:
-
1 cup plain Greek yogurt
-
½ cucumber, grated and squeezed dry
-
1 Tbsp lemon juice
-
1 Tbsp olive oil
-
1 clove garlic, finely minced
-
1 Tbsp fresh dill, chopped (or mint)

Salt & pepper, to taste
Let’s Cook

Cook the Quinoa (or Base):
If you don’t already have quinoa prepped, cook according to package directions. Set aside. -
Make the Beef:
Heat a skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Stir in garlic, cumin, paprika, oregano, red pepper, salt, and black pepper. Cook until fragrant, ~5 minutes. -
Prepare Tzatziki:
In a bowl, mix Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, and dill. Season with salt and pepper. Chill until ready to serve. -
Assemble the Bowls:
Divide quinoa among 4 bowls. Top each with seasoned ground beef, cucumber, bell pepper, cherry tomatoes, onion, avocado slices, and olives. -
Finish & Enjoy:
Drizzle with tzatziki sauce, sprinkle with fresh parsley or dill, siracha, and serve right away!
