What You’ll Need

For the Beef:

  • 1 lb Pasture Provisions grass-fed ground beef

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1 tsp dried oregano

  • ½ tsp crushed red pepper (optional)

  • Salt & black pepper, to taste

For the Bowl:

  • 2 cups cooked quinoa (or brown rice/cauliflower rice)

  • 1 large cucumber, diced

  • 1 red bell pepper, diced

  • 1 cup cherry tomatoes, halved

  • ½ red onion, thinly sliced

  • 1 avocado, sliced

  • ½ cup Kalamata olives, halved

  • drizzle of 2 Tbsp fresh parsley or dill, chopped

  • Sriracha for heat is desired

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt

  • ½ cucumber, grated and squeezed dry

  • 1 Tbsp lemon juice

  • 1 Tbsp olive oil

  • 1 clove garlic, finely minced

  • 1 Tbsp fresh dill, chopped (or mint)

  • Salt & pepper, to taste

 

Let’s Cook

  1. Cook the Quinoa (or Base):
    If you don’t already have quinoa prepped, cook according to package directions. Set aside.

  2. Make the Beef:
    Heat a skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Stir in garlic, cumin, paprika, oregano, red pepper, salt, and black pepper. Cook until fragrant, ~5 minutes.

  3. Prepare Tzatziki:
    In a bowl, mix Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, and dill. Season with salt and pepper. Chill until ready to serve.

  4. Assemble the Bowls:
    Divide quinoa among 4 bowls. Top each with seasoned ground beef, cucumber, bell pepper, cherry tomatoes, onion, avocado slices, and olives.

  5. Finish & Enjoy:
    Drizzle with tzatziki sauce, sprinkle with fresh parsley or dill, siracha, and serve right away!
