What You’ll Need

For the Burgers

Roasted Green Chile & Tomato Relish

  • 4–5 roasted green chiles (poblano, Anaheim, or Hatch), peeled & chopped

  • 2 medium tomatoes, diced

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • Optional: squeeze of lime

Burger/Fry Sauce

  • ½ cup mayo

  • 2 tbsp ketchup

  • 1 tbsp yellow mustard

  • 1 tsp Worcestershire sauce

  • 1–2 tsp fresh lime juice

  • Pinch of salt & pepper

Toppings

  • Sweet crisp lettuce

  • Extra lime wedges (optional)

 

Let’s Cook

1. Make the Burger/Fry Sauce

In a small bowl mix together: mayo, ketchup, mustard, Worcestershire, lime juice. Tehn Season with a pinch of salt and pepper. Chill until ready to use.

2. Prepare the Green Chile Relish

Heat olive oil in a skillet over medium heat. Add garlic and cook 30 seconds until fragrant.
Add chopped roasted green chiles and diced tomatoes. Cook 5–7 minutes until softened and slightly reduced. Season with salt, pepper, and a squeeze of lime if desired.
Set aside.

3. Get Patties Ready

Let patties get to room temperature. Season generously with salt and black pepper on both sides.

4. Cook the Burgers

Heat a skillet or grill over medium-high heat and add oil. Cook patties 3–4 minutes per side, or until desired doneness. In the last minute of cooking, top each patty with pepper jack cheese and let melt.

5. Toast the Buns

Lightly toast sesame seed buns until golden.

6. Build the Burgers

Spread burger sauce on both sides of the bun.

Layer:

  1. Bottom bun

  2. Sweet crisp lettuce

  3. Cheeseburger patty

  4. Roasted green chile & tomato relish

  5. Top bun

7. Serve

Serve immediately with fries, chips, or a simple salad. Enjoy!
