What You’ll Need

For the Burgers

Burger Seasoning

  • 1 tsp paprika
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp brown sugar

For the Mushrooms & Onions

  • 8 oz mushrooms, sliced
  • 1 large yellow onion, thinly sliced
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste

Horseradish Mayo Sauce

  • ½ cup mayonnaise
  • 2 tbsp prepared horseradish
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp lemon juice
  • Pinch of black pepper

Optional Toppings

  • Leaf lettuce
  • Tomato slices
  • Dill pickles

Let’s Cook

1. Make the Horseradish Mayo

In a small bowl combine: mayonnaise, horseradish, Dijon mustard, Worcestershire sauce, lemon juice, and black pepper. Mix well and refrigerate until ready to serve.

2. Sauté the Mushrooms & Onions

Heat butter and olive oil in a skillet over medium heat. Add onions and cook for 8–10 minutes, stirring occasionally. Add mushrooms and continue cooking for 6–8 minutes until: onions are golden, mushrooms are browned, and moisture has evaporated. Season lightly with salt and pepper. Set aside and keep warm.

3. Prepare the Burger Patties

 In a small bowl combine: paprika, sea salt, black pepper, garlic powder, onion powder, and brown sugar. Season both sides of each patty generously.

4. Grill the Burgers

Preheat grill to medium-high heat. Grill burgers for approximately: 4–5 minutes per side for medium, or 5–6 minutes per side for medium-well. During the final minute of cooking, top each burger with a slice of Swiss cheese and close the grill lid to melt. Remove burgers and let rest for 2–3 minutes.

5. Toast the Buns

Place sesame seed buns cut-side down on the grill for 30–60 seconds until lightly toasted.

6. Build the Burgers

Spread horseradish mayo on the top and bottom buns. Layer:

  1. Bottom bun
  2. Burger patty with melted Swiss cheese
  3. Sautéed mushrooms and onions
  4. Optional lettuce, tomato, or pickles
  5. Top bun

7. Serve

Serve immediately with: crispy fries, roasted potatoes, onion rings, or a side salad. Enjoy!
