We are fortunate to get our hands on some of the best heritage breed pasture-raised pork in Colorado and we love the nitrate free ham steaks and hocks.   If you're lucky enough to get one of these ham products in your basket they pair great with Anasazi Beans from Adobe Milling from Dove Creek Colorado to make Ham Hocks and Beans.   Pair with rice or cornbread for an easy meal.
Ingredients
  • 2 cups dry Anasazi Beans sorted and washed
  • 1 Ham hock (1-2#)
  • Substitute for Ham Hock:  1 Ham steak ~1-1.5# (cubed)
  • 1 medium sized yellow onion diced
  • 1 tbsp minced garlic
  • 1tsp Cumin
  • 1 tbsp salt or Seasoning Salt
  • 1/2 tsp ground black pepper
  • 6 Cups Water
  • * Chopped green onions for garnishing optional

 

Instructions
  1. After sorting and washing the beans, put them in the crock pot.
  2. Add in the onions, garlic, and ham hock ( or substitution).  If using ham steak add bone to crock pot with cubed meat
  3. Pour in the water, then sprinkle in the seasonings.
  4. Cover the Crock Pot, then set in on low for 6 hours.
  5. Once the beans are done, serve them over rice.or cornbread
  6. Garnish with green onions ( optional).
  7. Enjoy!
