What You’ll Need

Pork Chops

  • 2 bone-in pork chops

  • 1 Tbsp olive oil or high-heat oil 

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

Maple Glaze

  • 2 Tbsp butter

  • 2 Tbsp maple syrup

  • 1 Tbsp honey

  • 1 clove garlic, minced

  • 1 tsp Dijon mustard

  • 1 tsp soy sauce

  • ½ tsp sriracha (adjust to taste)

  • 1 Tbsp brown sugar

Rainbow Mashed Potatoes

  • 1 ½ lbs mixed rainbow potatoes (purple, yellow, red varieties)

  • 2 Tbsp butter

  • ¼ cup milk or cream (more as needed)

  • Salt and pepper to taste

Rainbow Carrots

  • ½ lb rainbow carrots, peeled and cut into pieces

  • 1 Tbsp olive oil

  • Salt and pepper to taste

  • Optional: drizzle of honey or maple syrup before serving

 

Let’s Cook

Step 1 - Prep the sides

Preheat the oven to 400°F (205°C).
Place peeled rainbow carrots on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20–25 minutes, turning halfway through, until tender and caramelized.

Meanwhile, place chopped rainbow potatoes in a pot of salted water. Bring to a boil and cook until fork tender, about 15–20 minutes. Drain, then mash with butter, milk, salt, and pepper. Adjust consistency as desired and keep warm.

2. Season and sear the pork chops

Pat pork chops dry with a paper towel. Mix salt, pepper, paprika, garlic powder, and onion powder in a small bowl, then season both sides of the pork chops.

Heat oil in an oven-safe skillet (cast iron preferred) over medium-high heat. Once hot, sear pork chops for 2–3 minutes per side until golden brown.

Transfer the skillet to the oven and bake for 6–8 minutes, or until the pork reaches an internal temperature of 145°F. Remove and let rest while making the glaze.

3. Make the maple glaze

In a small saucepan over medium heat, melt butter. Add minced garlic and cook 30 seconds until fragrant. Stir in maple syrup, honey, Dijon mustard, soy sauce, sriracha, and brown sugar. Simmer for 3–4 minutes, stirring occasionally, until thickened and glossy.

Brush or spoon the glaze generously over the rested pork chops.

4. Plate and serve

Serve the pork chops over a scoop of rainbow mashed potatoes with roasted rainbow carrots on the side. Drizzle any extra glaze over the top, and garnish with fresh herbs if desired.
