Here are some pro tips form Pasture Provisions. Always use a meat thermometer for accuracy. For juicier results, ALWAYS allow your meat cuts to rest before slicing. Avoid cutting into meat immediately, it releases juices prematurely. Beef

  • Steaks & Roasts: 145°F — Rest 3 minutes
    Medium-rare; cook longer for well-done

  • Ground Beef: 160°F — No rest
    Should be fully cooked with no pink remaining

Pork

  • Whole Cuts (Chops, Roasts, etc.): 145°F — Rest 3 minutes
    Slight pink center is safe

  • Ground Pork: 160°F — No rest

  • Ham (Precooked): 140°F — Reheat only

  • Ham (Fresh/Raw): 145°F  — Rest 3 minutes

Chicken

  • Whole, Parts, or Ground: 165°F  — No rest
    Always fully cooked, no pink

Lamb

  • Steaks & Roasts: 145°F — Rest 3 minutes
    Medium-rare is safe and tender

  • Ground Lamb: 160°F  — No rest

Seafood

  • Fish Fillets: 145°F 
    Flesh should be opaque and flake easily

  • Shrimp: Cook until opaque and firm
