What You'll Need

  • 6 slices Pasture Provisions bacon

  • 4 slices sourdough or ciabatta bread

  • 1 Tbsp olive oil or butter (for toasting)

  • ½ cup mayonnaise

  • 2 Tbsp fresh basil, finely chopped (plus extra leaves for layering)

  • 1 tsp lemon juice

  • 1 small garlic clove, minced

  • 4 large lettuce leaves (romaine, butterhead, or arugula)

  • 2 large ripe tomatoes, sliced (heirloom or beefsteak ideal)

  • 4 slices cheese (cheddar, provolone, gouda or mozzarella)

  • Salt & freshly cracked black pepper, to taste

 

Let's Cook

  1. Cook the Bacon
    Place bacon strips on a lined baking sheet and bake at 400°F for 15–20 minutes until crispy. Drain on paper towels.

  2. Toast the Bread
    Lightly brush bread slices with olive oil or butter and toast in a skillet until golden brown (or use a toaster for convenience).

  3. Make the Basil Mayo
    In a small bowl, combine mayonnaise, chopped basil, lemon juice, garlic, salt, and pepper. Mix until smooth.

  4. Assemble the Sandwich

    • Spread basil mayo on both sides of the toasted bread.

    • Layer lettuce leaves, followed by sliced tomatoes (season lightly with salt & pepper).

    • Add bacon strips, then cheese slices.

    • Tuck in a few whole basil leaves for extra flavor.

    • Top with the second slice of bread and press gently.

  5. Serve & Enjoy
    Slice in half and serve immediately while the bacon is crisp and the basil mayo is fresh.
