What You’ll Need

  • 1 pound ground pork

  • 1 Tbsp grated fresh ginger

  • 1 Tbsp neutral oil (avocado, grapeseed, or vegetable oil)

  • 1 Tbsp sugar (cane or brown sugar works great)

  • 1 Tbsp rice cooking wine (mirin or sake substitute if needed)

  • 3 Tbsp soy sauce

  • 1 Tbsp toasted sesame oil

  • 4 scallions, chopped (reserve a little for garnish)

  • 1 Tbsp roasted sesame seeds

  • 4 cups cooked rice (white or brown)

Let’s Cook

  1. Make Sauce
In a small bowl, whisk together sugar, rice cooking wine, and soy sauce. Set aside.

  2. Cook Pork
Heat oil in a large skillet or wok over medium-high heat. Add ground pork and grated ginger. Cook 2–3 minutes, breaking up the pork until it’s browned and no longer pink.

  3. Season & Simmer
Stir in the prepared sauce mixture. Cook for another 2 minutes, letting the flavors meld and the liquid slightly reduce.

  4. Finish with Flavor
Add sesame oil, roasted sesame seeds, and chopped scallions. Stir well and cook for 30 seconds, then remove from heat.

  5. Assemble Bowls
Spoon warm rice into bowls and top generously with the ginger pork mixture. Garnish with extra scallions and sesame seeds if you like.
