What You’ll Need:

  • 1 tablespoon coconut oil (or enough to coat the pan)

  • 2 Pasture-Raised Pork Chops (about ½ lb each)

  • Generous pinch black pepper

  • 1 tablespoon good-quality honey

  • 1 tablespoon Sriracha

Let’s Cook:

  1. Preheat & Prep:
    Preheat your oven to 350°F. Heat the coconut oil in an oven-safe skillet (cast iron is ideal) over medium heat.

  2. Season & Sear:
    Season the pork chops generously with black pepper (skip the salt for this one). Place them in the hot skillet and sear for 3–5 minutes per side, or until they release easily from the pan and have a golden crust.

  3. Sauce & Bake:
    Once both sides are browned, pour honey and Sriracha over the pork chops in the pan. Tilt or stir gently to coat.

  4. Into the Oven:
    Transfer the skillet to the preheated oven and bake for 15 minutes, or until the pork is cooked through and juices run clear. Internal temp should reach 145°F.

  5. Serve & Savor:
    Spoon the flavorful pan sauce over the chops before serving. The mixture of pork drippings, honey, coconut oil, and Sriracha makes a rich, spicy-sweet glaze you won’t want to waste. Serve with roasted veggies, rice, or a crisp salad.
