What You’ll Need:

  • 12 Pasture-Raised Eggs (NutriPeak Farms or similar)

  • 12 corn or flour street tortillas

  • 1 container Holy Frijole Denver refried beans (or your favorite)

  • 8 oz homemade or store-bought salsa

Toppings (optional but highly recommended):

  • Chopped white onion

  • Chopped cilantro

  • Chopped tomato

  • Sliced avocado

  • Queso fresco or cotija cheese

  • Hot sauce

 

Let’s Cook:

  1. Warm the Tortillas

    • Heat a griddle or skillet and lightly coat with avocado oil.

    • Cook tortillas until warm and slightly crisp (about 1–2 minutes per side).

  2. Cook the Eggs

    • In a skillet, cook eggs over easy or fried in butter to your preferred doneness.

  3. Heat the Beans & Salsa

    • Warm refried beans and salsa separately, or combine them for a blended layer.

  4. Assemble

    • Spread beans and salsa over 2–3 tortillas per person.

    • Top with cooked eggs.

    • Lightly salt the eggs to enhance flavor.

  5. Garnish & Serve

    • Add your favorite toppings, onion, cilantro, tomato, avocado, cheese, and a drizzle of hot sauce.

    • Serve immediately while warm.
