In a small bowl, mix mayo, ketchup, Dijon, BBQ sauce, smoked paprika, garlic powder, and optional pickle juice or hot sauce.
-
Stir until smooth and refrigerate until ready.
Cook the Mushrooms
-
Heat butter in a pan over medium heat.

Add sliced mushrooms, sauté 4–5 minutes until they begin to brown.
-
Add soy sauce or Worcestershire and a pinch of pepper. Cook 1 more minute.
-
Remove from heat and set aside.
Cook the Burgers

Heat butter or oil in a skillet or cast-iron over medium-high heat.
-
Cook patties ~3–4 minutes per side, or until desired doneness.

Add Swiss cheese during the last minute, cover to melt.
Assemble
-
Lightly toast brioche buns (pan, grill, or broiler).
-
Spread smoky sauce on both bun halves.
-
Add burger patty with melted Swiss.
-
Top generously with sautéed mushrooms.
-
Finish with top bun and serve immediately. Serve with your favorite sides!
