What You'll Need

Burgers

  • 1 lb grass-fed ground beef

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp Worcestershire sauce (optional)

  • 1 tbsp butter or oil (for cooking)

  • 2 slices Swiss cheese

  • 2 brioche buns (toasted)

Sautéed Mushrooms

  • 1 cup cremini or button mushrooms, sliced

  • 1 tbsp butter

  • 1 tsp soy sauce or Worcestershire

  • Pinch of black pepper

Smoky Burger Sauce

  • 3 tbsp mayo

  • 1 tbsp ketchup

  • 1 tsp Dijon mustard

  • 1 tsp BBQ sauce (smoky style)

  • ½ tsp smoked paprika

  • ¼ tsp garlic powder

  • Optional: splash of pickle juice or hot sauce

Let's Cook

Make the Sauce

  1. In a small bowl, mix mayo, ketchup, Dijon, BBQ sauce, smoked paprika, garlic powder, and optional pickle juice or hot sauce.

  2. Stir until smooth and refrigerate until ready.

Cook the Mushrooms

  1. Heat butter in a pan over medium heat.

  2. Add sliced mushrooms, sauté 4–5 minutes until they begin to brown.

  3. Add soy sauce or Worcestershire and a pinch of pepper. Cook 1 more minute.

  4. Remove from heat and set aside.

Cook the Burgers

  1. Form ground beef into two ½-lb patties, pressing a slight dimple in the center (helps avoid doming).

  2. Season both sides with salt, pepper, garlic powder, and Worcestershire.

  3. Heat butter or oil in a skillet or cast-iron over medium-high heat.

  4. Cook patties ~3–4 minutes per side, or until desired doneness.

  5. Add Swiss cheese during the last minute, cover to melt.

Assemble

  1. Lightly toast brioche buns (pan, grill, or broiler).

  2. Spread smoky sauce on both bun halves.

  3. Add burger patty with melted Swiss.

  4. Top generously with sautéed mushrooms.

  5. Finish with top bun and serve immediately. Serve with your favorite sides!
