What You’ll Need

For the Burger

  • 1 lb ground beef burger patties

  • 2 hamburger buns, toasted

  • 2 slices American cheese

  • 1 tbsp avocado oil

  • Salt & freshly ground black pepper

For the Sauce

  • 2 tbsp mayonnaise

  • 1 tbsp sriracha ketchup (or mix ketchup + sriracha to taste)

  • 1 tsp mustard (Coleman’s preferred)

  • 1 tbsp diced dill pickle

  • Salt & pepper, to taste

For the Onions

  • 1 large yellow onion, thinly sliced

  • 1 tbsp avocado oil

  • 2 tbsp vermouth

  • Salt & pepper, to taste

 

Let’s Cook

  1. Make the Sauce

    • In a small bowl, mix mayo, sriracha ketchup, mustard, diced pickles, and a pinch of salt and pepper.

    • Chill until ready to use.

  2. Caramelize the Onions

    • Heat avocado oil in a skillet over medium-low heat.

    • Add onions, season with salt and pepper, and cook slowly, stirring often, until golden brown (12–15 minutes).

    • Deglaze with vermouth and cook until liquid is absorbed. Keep warm.

  3. Cook the Burgers

    • Divide beef into 2 equal balls. Heat a cast-iron skillet or griddle over medium-high and add a drizzle of avocado oil.

    • Place beef balls on the hot surface and smash firmly with a spatula until thin. Season with salt and pepper.

    • Cook 2–3 minutes per side until crisp edges form.

    • Top with cheese, cover, and let melt.

  4. Assemble the Burgers

    • Spread sauce on the bottom bun.

    • Add patty with cheese, pile on caramelized onions, and top with bun.

    • Serve immediately with fries, chips, or salad.
