What You’ll Need

4 pita breads (look for ones with sesame or whole wheat)

Olive oil, for brushing

Everything Bagel Seasoning (to coat pitas)

1 lb pasture-raised ground beef (swap for ground lamb for richer flavor)

Beef stock concentrate (or ½ tsp beef broth granules)

Za’atar spice blend (about 1 tbsp)

Salt & black pepper, to taste

½ lemon, juice from quarters for salad & sauce

1 tomato, diced

1 mini cucumber, diced

2 tbsp yogurt (plain) + 4 tbsp hummus & mix for creamy sauce

Hot sauce, for drizzling (optional)
Let’s Cook
1. Prep Salad & Sauce

In a small bowl, toss diced tomato and cucumber with a drizzle of olive oil, lemon juice, salt, and pepper.

In another bowl: whisk together yogurt, hummus, a splash of water (1 tsp for single batch), and lemon juice to form a smooth, drizzly sauce.
2. Cook the Beef

Heat a drizzle of oil in a large skillet over medium-high. Add ground beef, crumbling it, then stir in stock concentrate, half the za’atar, salt, and pepper. Cook until browned through (about 4–6 min). Transfer to a plate.
3. Toast the Pitas

Wipe out the pan and return to medium heat. Brush pita outsides with olive oil, sprinkle with Everything Bagel seasoning, pressing lightly. Toast in the pan until golden and crisp (2–3 min each side).
4. Assemble

Spread some yogurt hummus sauce inside each pita. Fill with spiced beef, then top with tomato-cucumber salad. Drizzle more sauce and hot sauce if desired. Serve with extra lemon wedges or salad on the side.
