What You’ll Need
For the Burger Patties

1 lb Pasture Provisions Grass-Fed Ground Beef Patties

¼ cup brown sugar
-
Salt & freshly cracked black pepper, to taste

4 fresh sweet brioche burger buns, buttered and toasted
- 1 slice of American cheese in the middle of each patty
Secret Sauce #1 (Tangy Pickle Tartar)
-
¼ cup mayonnaise (or Miracle Whip if you prefer)
-
2 tbsp dill pickle relish (or finely chopped dill pickles)

1 tsp dill pickle juice
-
2 tbsp white onion, finely chopped
-
1 tsp salt & pepper
-
1 tbsp white sugar
Secret Sauce #2 (Smoky BBQ Blend)

½ cup ketchup
-
2 tbsp golden molasses
-
2 tbsp taco sauce
-
1 tbsp Worcestershire sauce
-
1 tsp white sugar
-
2 tsp soy sauce
-
⅛ tsp black pepper
- 1 tbsp yellow mustard
Let’s Cook

Make the Sauces

For the tartar: In a small bowl, mix together mayo, relish, pickle juice, onion, salt, and sugar. Chill until ready to serve.

For the BBQ: Whisk ketchup, yellow mustard, molasses, taco sauce, Worcestershire, sugar, soy sauce, and pepper until smooth. Set aside.

Season the Patties
Season athe ground beef patties with brown sugar, salt, and pepper. -
Cook the Burgers
Heat a cast iron skillet or put skillet on grill over medium-high heat. Cook patties for 3–4 minutes per side, until browned and cooked to desired doneness (medium recommended). After first side is cooked and second side is almost done, place American cheese on pattie. -
Toast the Buns
Spread butter on the buns and toast cut-side down until golden brown. -
Assemble the Galley Boy
Add a generous spoonful of tartar sauce on the top of the bun, then drizzle with the smoky BBQ sauce on the bottom of the bun. Place 2 patties with 1 slice of cheese in between patties in between buns, and top with the second bun half. -
Serve & Enjoy
Serve hot with fries, onion rings, or a cold drink, just like the classic.
