What You’ll Need

  • 1 medium acorn squash, halved and seeded

  • 2 tablespoons butter

  • 2 tablespoons brown sugar

  • Pinch of salt (optional, to balance sweetness)

 

Let’s Cook

  1. Preheat Oven: Set oven to 350°F.

  2. Prep the Squash: Cut acorn squash in half lengthwise and scoop out seeds. Place the halves cut-side down on a baking sheet.

  3. First Roast: Bake for 30–45 minutes, until the squash begins to soften.

  4. Fill and Roast Again: Remove from oven, flip squash halves cut-side up, and place into a snug baking dish (to keep them steady). Add 1 tablespoon of butter and 1 tablespoon of brown sugar to each half.

  5. Finish Roasting: Return to the oven for another 30 minutes, or until the squash is tender and caramelized.

  6. Serve: Spoon the melted butter-sugar mixture over the squash flesh before serving warm.
