What You’ll Need

  • 2 cups cooked chicken breast, shredded or chopped (grilled if possible for max charred flavor)

  • ½ cup Caesar dressing (homemade or store-bought)

  • 2 cups chopped romaine lettuce

  • 1 cup cherry tomatoes, halved

  • 1 ear fresh corn, cooked and kernels removed (or 1 cup frozen corn, thawed)

  • ½ cup bacon bits (or 4 strips cooked bacon, crumbled)

  • 1 avocado, diced

  • ½ cup grated Parmesan cheese

  • 4 large flour tortillas (10-inch works best)

  • 1.5 cups croutons (homemade or store-bought) 

 

Let’s Cook

  1. Prep the Chicken
    Grill chicken till fully cooked and charred. Let rest till cool. In a medium bowl, toss the cooked chicken with Caesar dressing until well coated.

  2. Assemble the Filling
    Add lettuce, tomatoes, corn, bacon bits, avocado, croutons, and Parmesan cheese. Gently toss to combine, being careful not to mash the avocado.

  3. Build the Wraps
    Warm tortillas slightly to make them pliable. Place an even amount of the chicken mixture in the center of each tortilla. Fold in the sides, then roll tightly like a burrito.

  4. Serve
    Slice in half and serve immediately, or wrap in parchment/foil for a portable meal. Put extra dressing in a small bowl for dipping if prefered.
