What You’ll Need:

4 large Italian frying peppers

2–4 tbsp olive oil (start with 2, add more as needed)

2 tbsp grated Parmesan cheese (plus more for serving)
Let’s Cook:

Prep the Peppers

Slice peppers in half lengthwise.

Remove stems, seeds, and any thick ribs.

Heat the Skillet

Place a seasoned cast iron skillet over medium-high heat until very hot.

Reduce heat to medium and add 2 tbsp olive oil.

Char the Peppers

Place peppers cut-side down in a single layer (work in batches if needed).

Cook undisturbed for 5 minutes, letting steam soften the peppers.

Flip with tongs and cook another 5 minutes until skin blisters and chars.

Finish & Serve

Continue cooking and flipping until peppers are as soft and charred as you like (5–10 minutes more).

Repeat with remaining peppers, adding more olive oil if needed.

Transfer to a plate, blanket with Parmesan cheese, and serve immediately.
