What You’ll Need:

  • 4 large Italian frying peppers

  • 2–4 tbsp olive oil (start with 2, add more as needed)

  • 2 tbsp grated Parmesan cheese (plus more for serving)

 

Let’s Cook:

  1. Prep the Peppers

    • Slice peppers in half lengthwise.

    • Remove stems, seeds, and any thick ribs.

  2. Heat the Skillet

    • Place a seasoned cast iron skillet over medium-high heat until very hot.

    • Reduce heat to medium and add 2 tbsp olive oil.

  3. Char the Peppers

    • Place peppers cut-side down in a single layer (work in batches if needed).

    • Cook undisturbed for 5 minutes, letting steam soften the peppers.

    • Flip with tongs and cook another 5 minutes until skin blisters and chars.

  4. Finish & Serve

    • Continue cooking and flipping until peppers are as soft and charred as you like (5–10 minutes more).

    • Repeat with remaining peppers, adding more olive oil if needed.

    • Transfer to a plate, blanket with Parmesan cheese, and serve immediately.
