What You’ll Need

  • 8 NutriPeak pasture-raised eggs

  • ¼ cup whole milk

  • 6 oz Pasture Provisions bacon

  • 4 oz thinly sliced mushrooms

  • ¼ cup shredded cheese (your choice)

  • 2 oz feta cheese

  • ¼ cup chopped green onions or chives

  • 1 tsp salt

  • ½ tsp black pepper

  • Butter (for greasing pie plate)

 

Let’s Cook

  1. Cook the Bacon
    Fry bacon until crisp, then finely chop. Set aside to cool.

  2. Sauté the Mushrooms
    In 1–2 tablespoons of the reserved bacon fat (plus a little butter if needed), sauté mushrooms over medium heat until tender. Let cool.

  3. Prep the Oven & Dish
    Preheat oven to 350°F.
    Generously butter a stoneware, glass, or ceramic pie plate.

  4. Mix the Filling
    In a large bowl, whisk eggs with milk, salt, and pepper. Stir in bacon, mushrooms, shredded cheese, feta, and green onions.

  5. Bake the Quiche
    Pour mixture into prepared pie plate. Bake for 40–45 minutes, checking at 35 minutes with a toothpick or knife to ensure the center is set.

  6. Rest & Serve
    Allow to cool for 10–15 minutes before slicing. Serve warm or at room temperature.
