What You’ll Need

8 NutriPeak pasture-raised eggs

¼ cup whole milk

6 oz Pasture Provisions bacon

4 oz thinly sliced mushrooms

¼ cup shredded cheese (your choice)

2 oz feta cheese

¼ cup chopped green onions or chives

1 tsp salt

½ tsp black pepper

Butter (for greasing pie plate)
Let’s Cook

Cook the Bacon
Fry bacon until crisp, then finely chop. Set aside to cool. -
Sauté the Mushrooms
In 1–2 tablespoons of the reserved bacon fat (plus a little butter if needed), sauté mushrooms over medium heat until tender. Let cool. -
Prep the Oven & Dish
Preheat oven to 350°F.
Generously butter a stoneware, glass, or ceramic pie plate. -
Mix the Filling
In a large bowl, whisk eggs with milk, salt, and pepper. Stir in bacon, mushrooms, shredded cheese, feta, and green onions. -
Bake the Quiche
Pour mixture into prepared pie plate. Bake for 40–45 minutes, checking at 35 minutes with a toothpick or knife to ensure the center is set. -
Rest & Serve
Allow to cool for 10–15 minutes before slicing. Serve warm or at room temperature.
